This avocado salad is like a breakfast salsa that could be added into your morning omelette. Avocado is extremely nutritious and contains more potassium than a banana. Paired with a tomato, this salad also contains fiber and vitamin C.
- 1 avocado
- 1 Large tomato
- 1/3 of fresh cucumber
- 2 Tablespoons Extra virgin olive oil
- 1 stem green onion
- Chop avocado, cucumber and tomato into small squares.
- Chop 1 stem green onion.
- Combine ingredients with 2 Tablespoons extra virgin olive oil.
- Add salt and pepper to taste.
