Vitamin A promotes good vision and important for healthy growing. Carrots is a great source of vitamin A in the form of beta-carotene. Carrots are also a good source of several other vitamins such as biotin (plays an important role in protein metabolism), potassium (essential mineral and important for controlling blood pressure), vitamin K1 (important for bone health and blood coagulations).
Ever since I tried this quick carrot salad at my in-laws, I have been craving it. So of course I had to come home and make it.
Quick Carrot Salad Recipe
- 2 medium size carrots, grated
- 1 Tablespoon dill, chopped
- 1/4 red onion, chopped
- 2 Tablespoons organic mayonnaise
- A pinch of salt
- Combine all ingredients together.
