Salmon Tomato Spinach Salad with Dijon Yogurt Dressing

Sometimes there is no time for cooking a raw salmon. In this salmon tomato spinach salad you don't need to waste anytime preparing a healthy lunch. I used 1 small can of wild sockeye salmon. It is topped on the spinach, which is high in nutrients, vitamin A packed tomato, and olives that keep you feeling full. 

Ingredients

  • 1 cup chopped spinach 
  • 1 plum tomato 
  • 1/4 cup black pitted olives (optional) 
  • 3 Tablespoons plain yogurt 
  • 1 teaspoon dijon mustard 
  • 1 teaspoon chopped dill
  • 1 teaspoon lemon juice
  • pinch of salt

Instructions 

  1. Add 1 cup chopped spinach, 1 sliced plum tomato and 1/4 cup black pitted olives together. 
  2. Dressing: Stir together 3 Tablespoons plain yogurt, 1 teaspoon dijon mustard, 1 teaspoon chopped dill, 1 teaspoon lemon juice and a pinch of salt. Drizzle on the salad.
