Sometimes there is no time for cooking a raw salmon. In this salmon tomato spinach salad you don't need to waste anytime preparing a healthy lunch. I used 1 small can of wild sockeye salmon.
- 1 cup chopped spinach
- 1 plum tomato
- 1/4 cup black pitted olives (optional)
- 3 Tablespoons plain yogurt
- 1 teaspoon dijon mustard
- 1 teaspoon chopped dill
- 1 teaspoon lemon juice
- pinch of salt
- Add 1 cup chopped spinach, 1 sliced plum tomato and 1/4 cup black pitted olives together.
- Dressing: Stir together 3 Tablespoons plain yogurt, 1 teaspoon dijon mustard, 1 teaspoon chopped dill, 1 teaspoon lemon juice and a pinch of salt. Drizzle on the salad.
