Spring Radish with Cucumber and Mint


  • 1 bush of spring radish

  • 1 /4 cucumber

  • 1 stem fresh green onion

  • 1 stem fresh mint

  • 3 Tablespoons mayonnaise

  • 1 teaspoon poppy seeds

  • 1 teaspoon apple cider vinegar

  • pinch of salt

  • pinch of sugar


  1. Wash and slice 1 bush of radishes and 1/4 of a cucumber.

  2. Chop 1 stem fresh green onion and 1 stem fresh mint.

  3. Poppyseed dressing: Stir together 1 teaspoon poppy seeds, 1 teaspoon apple cider vinegar, a pinch of salt, and a pinch of sugar. Let stand for three minutes before drizzling, combining with the vegetables.
