I have a sweet tooth! Whenever I eat something savory, I feel like I need a bite of sweetness right after. It used to be candy or cakes, but after I started eating cleaner, I stopped baking. Especially now that the season is full of natural sweet fruits, there is no need for cake.
After I started to incorporate much more fruit into my diet, I found that I don't crave sugar as much as I used to. With this sweet quinoa fruit salad, you will get all the sweetness you desire for significantly fewer calories than cookies, candy, or cake.
This salad contains a good source of protein in the quinoa. Besides that, the berries are good for keeping you mentally sharp. And on top of those benefits, mint is full of antioxidants.
- 1/2 cup cooked quinoa
- 1/2 pound strawberries
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1 stem fresh mint
- 1/2 lemon
- 3 Tablespoons honey
- Cut strawberries into bite sizes, mix with 1/2 cup blueberries, 1/2 cup blackberries, 1/2 cup cooked quinoa and chopped fresh mint.
- Sweet dressing: In a small bowl whisk together juice from 1/2 lemon and 3 Tablespoons honey; mix with fruit and quinoa.
