How refreshing! Nothing is better than a bowl of fruits on a sunny day. This vanilla bean salad makes a great healthy dessert or snack. There are vitamins in every bite. The grapefruit mainly consists of vitamin C and vitamin A. Vitamin C is good for skin elasticity as well as strengthening blood vessels while vitamin A benefits the eyes, teeth and skin. Eating pineapple will provide your body with more vitamin C. It also contains 2% of vitamin A, calcium and iron.  Although there is a small amount of vanilla extract, it has big benefits! Vanilla extract is not only for baking: it works perfectly in this salad. Benefits include the fact that it is an antioxidant to protect your body and has anti-inflammation abilities. 

Vanilla Fruit Salad


  • 1 grapefruit

  • 1 pineapple

  • 1/2 pound strawberries

  • 1/2 pound blueberries

  • Juice of 1 orange

  • 1/2 teaspoon of vanilla


  1. Peel and chop 1 grapefruit and 1 pineapple.

  2. Wash and chop 1/2 pound of fresh strawberries.

  3. Add in washed 1/2 pound blueberries.

  4. Combine cut fruits with juice of 1 orange (about 1/2 cup) and 1/2 teaspoon of vanilla extract.
