Refresh! Nothing better than a bowl of fruits on a sunny day. This vanilla bean salad makes a great healthy dessert or snack. There are vitamins in every bite.
- 1 grapefruit
- 1 pineapple
- 1/2 pound strawberries
- 1/2 pound blueberries
- Juice from 1 orange
- 1/2 teaspoon of vanilla
- Peel and chop 1 grapefruit and 1 pineapple.
- Wash and chop 1/2 pound of fresh strawberries.
- Add in washed 1/2 pound blueberries.
- Combine cut fruits with juice from 1 orange (about 1/2 cup) and 1/2 teaspoon of vanilla extract.
