Vitamin Salad

A plate of Vitamin Salad

Ingredients

  • 1 red beet 
  • 2 medium carrots
  • 1 apple
  • 1 stem green onion 
  • 2 Tablespoons vinegar 
  • 1/2 cup water
  • 2 Tablespoon extra virgin olive oil 
  • 1/2 Tablespoon cane sugar
  • 1/2 Tablespoon salt 

Instructions

  1. Grate 1 red beet, 2 medium carrots, 1 apple and 1 stem of green onion. ( I used a Julienne slicer) 
  2. Dressing: In a sauce pan combine 2 Tablespoons vinegar, 1/2 cup water, 2 Tablespoon oil, 1/2 Tablespoon sugar and 1/2 Tablespoon salt; bring all to a boil. Turn off heat and pour over grated ingredients.
