Ok, so I bought too many apricots this week. You know when all year you don't see apricot and then it appears in front of you first thing in the produce department. Like when you haven't seen a friend for a long time. When you see them again you get all excited and want to catch up, this was apricots and me this week; been eating them every day. Turns out, apricots are good for many things. This bright orange fruit is full of so much vitamin C that it is beneficial for the skin. The antioxidants found in apricots slow the aging process and result in youthful looking skin. The natural sweetener in this salad, honey, is anti-bacterial and anti-fungal, meaning that it can kill bacteria and fungus. Enjoy a warm apricot salad with feta and mint, it's simple but makes a low-calorie dessert, or just snack.

3 Tablespoons honey
1/2 cup water
1 Tablespoon crumbled feta cheese
1 stem fresh mint
Bring to a boil 1/2 cup of water and 3 Tablespoons honey. On medium-low heat simmer for 5 minutes. Take off heat.
Slice 6 apricots and stir them into syrup, making sure each slice gets covered. Let stand for 10 minutes.
Place apricots on a serving plate (you may drain the access syrup). Sprinkle 1 Tablespoon crumbled feta cheese and chopped fresh mint.
