Ok, so I bought too many apricots this week. You know when all year you don't see apricot and then it appears in front of you first thing in the produce department. Like when you haven't seen a friend for a long time. When you see them again you get all excited and want to catch up, this was apricots and me this week; been eating them every day. Enjoy a warm apricot salad with feta and mint, it's simple but makes a low-calorie dessert, or just snack.
Let me know if you like to have the nutritional facts to each recipe.
