Baked Sweet Potato Chips

I don't do much with sweet potatoes, but thought it's time to play around with it. My kids suggested making potato chips, so it's what I did. And I got to say, it was a hit with the kids. Sweet potatoes are pretty high in calories I think, but has many good nutritional benefits. It's a great source of Vitamin A, which is good for vision, skin health, bone growth, reproduction, immunity and antioxidant. Sweet potatoes are also a good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. So consider incorporating sweet potatoes into your diet.

Baked Sweet Potato Chips

ingredients:

  • 2 sweet potatoes

  • 1 Tablespoon extra-virgin olive oil

  • 1 teaspoon sea salt

instructions:

  1. Preheat oven to 400F.

  2. Peel and slice 2 sweet potatoes. 

  3. Toss potato slices with 1 Tablespoon extra-virgin olive oil and 1 teaspoon salt. 

  4. Arrange potato slices on a baking sheet, spacing them 1/4 inch apart. Bake for 30 minutes, flipping slices over halfway through. Sweet potato slices should be crisp and golden brown.
