Cherry Salad with Cherry Dressing

Summer brings many beautiful and juicy fruit. Cherries are some of the first summer fruit, and they are packed with benefits. Did you know that the riper the cherry the better? As cherries darken, they produce more antioxidants. Sweet cherries are loaded with potassium, a natural blood-pressure reducer. One cup of cherries packs roughly the same amount of potassium as a small banana. Cherries are also rich in beta carotene, vitamin C, anthocyanins and quercetin, which may work together synergistically to fight cancer. Cherries are only around the beginning of summer, so enjoy them while you can.  

Cherry Salad with Cherry Dressing Recipe



  • 1/2 cup cherries, pitted and chopped
  • 1/2 cup olive oil
  • 1 tsp dijon mustard
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon honey
  • pinch of salt


  • 5 oz baby spinach
  • 1/2 cup cherries, pitted and chopped
  • 1/4 cup pecans, chopped
  • 1/8 cup crumbled feta cheese
  • 1/4 cup blueberries
  • 1 avocado, peeled, pitted and chopped

How To: 

  1. In a blender combine dressing ingredients. Mix until smooth. Add salt to taste. 
  2. Add salad ingredients into a large bowl. Drizzle with cherry dressing.
