1/2 cup baby spinach
1 large tomato, sliced
1/2 Tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 scallion, chopped
Arrange spinach and tomato on a plate.
Mix together olive oil, salt, black pepper and scallions together. Drizzle on top.
