The best kind of recipes are the ones that are quick to make. This salad is always a favorite with any crowd. It can be paired with any protein or eaten on its own. I love the flavors, the color and just all the healthy goodness that goes into this salad. So easy! On a different note, the show Suits has come to an end, at least for the season. Summer is the time I best enjoy this salad. The ingredients are in season and that's when our body needs those nutrients the most. Talking about nutrients, tomatoes are an excellent source of vitamin C, in this salad it gives you a 66% daily value! Cucumbers are 95% water but are a source of vitamin A and are good for skin.
2 tomatoes, sliced and quartered
1 English cucumber, sliced and quartered
1 avocado, chopped
3 scallions, chopped
1 Tablespoon dill, chopped
1 Tablespoon lemon juice
2 Tablespoon olive oil
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
